    Egyptian Cucumber & Tomato Salad (Salata Baladi)

    2 medium English cucumbers

    4 small on the vine tomatoes

    1 bunch of fresh Italian parsley (chopped)

    1 teaspoon vinegar

    juice of 1/2 a lime

    1 teaspoon salt (to taste)

    ½ teaspoon pepper (to taste)

    1 Tablespoon dried mint

    optional add ins: 1 small red red onion and 1 seeded jalapeño

    Ohjeet

    Dice cucumbers and tomatoes into small pieces.

    Combine

    In a large bowl add diced tomatoes, cucumbers, Italian flat leaf parsley, vinegar, lime juice, (red onion and jalapeño, if using), salt, and pepper.

    Rub the dried mint leaves in the palm of a hand to release the oils, and add them to the salad.

    Toss together until thoroughly combined.

    Season as desired, and serve cold.
