Creamy Tuscan Chicken

Chicken seasoning for marination:
1 large Chicken breast sliced in 3, washed and pat dry
1 tsp oil,
1/2 tsp Black pepper
salt to taste
1/2 tsp Paprika
1/2- Dried parsley
1/2 tsp Garlic powder
For the base:
1 tbsp-Butter
3 Cloves of garlic diced or minced
2 tbsp- Tomato purée
1 ½ tbsp -Tuscan seasoning ( my own blend ) using
Smoked paprika, black pepper, garlic powder, thyme, rosemary, parsley, oregano , basil and salt.
1 Cup of cream
1 Cup of chicken stock
Onion
2 handful of spinach finely chopped
4/5 Sliced of sun dried tomatoes
8 Roasted plum tomatoes
1 Cup Parmesan cheese
Instructions
Marinade the chicken using the spice marination
Shallow fry the chicken in olive oil for 6 minutes on each side or until cooked through and leave aside
In a pan add butter, onion and diced garlic
Add tomato purée, stir in before adding the tuscan spice
Mix well to combine all ingredients together
Add cream and give it a mix before adding chicken stock to create a smooth base, let the mixture shimmer for 5 minutes on low heat
Add spinach and sun dried tomatoes give it a mix
Add the fried chicken to the base mixture
Add the roasted tomato
Add Parmesan cheese
Cook the mixture down for 2 minutes
Turn off the heat
