Thai Basil Pork Stir Fry with Fried Egg

Ingrédients

500g lean pork mince

1 ½ tbsp cooking oil

1/2 brown onion

2 tsp ginger, finely chopped

2 garlic cloves, finely chopped

1 chilli, deseeded and finely chopped

1 cup Thai Basil leaves, packed

2 eggs, fried

1 tbsp dark soy sauce

2 tbsp light soy sauce

1 tbsp brown sugar

2 tbsp oyster sauce

2 tsp fish sauce

Steamed rice, or vermicelli noodles, or lettuce cups

Instructions

Heat the oil in a large skillet or wok over high heat.

Add the onion, stalks of broccolini, ginger, garlic and chilli and cook for 2 minutes.

Add the pork mince and cook for 2 minutes until white, breaking up the meat with a wooden spoon.

Stir through leafy part of broccolini.

Add the sauce ingredients. Stir, then leave it to cook without touching until all the juices cook out and the pork starts to caramelise – about 2 minutes.

Serve over rice or vermicelli noodles, garnished with a fried egg.
