    Lemon Orzo Chicken

    Ingrédients

    3-4 Chicken breasts

    Olive oil

    1 shallot

    3-4 cloves minced garlic

    3 tbsp butter

    2 cups orzo

    4 cups chicken broth

    S&P

    1/2 cup heavy cream

    2 handfuls of spinach

    Freshly grated Parmesan cheese

    Instructions

    Start by seasoning your chicken breast to your liking. Heat your pan over medium high-heat for a few minutes before adding your chicken. Cook chicken thoroughly, adding butter halfway through cook time. Set aside cooked chicken.

    To the same pan add your minced garlic and diced shallot. Sauté for a few mins, add your orzo, give it a good stir, then pour in the chicken broth. Let simmer until orzo is almost fully cooked then sprinkle S&P, add your heavy cream, spinach, and fresh parm. Combine and let spinach soften then add cooked chicken back to pan and top with more Parmesan and lemon slices.
