Stir-Fried Pork with Peppers or Pea Pods

3/4 to 1 lb pork tenderloin, cut into 1/4 inch strips
2 tbsp soy sauce
2 tbsp fruit-flavored vinegar
1 tbsp grated fresh ginger
1 clove garlic, minced or pressed
1 tsp sesame oil
2 tbsp vegetable oil
1/4 cup raw, peeled peanuts
1 small onion, sliced
1 green pepper, seeded and sliced
1 red pepper, seeded and sliced
1 yellow pepper, seeded and sliced
2 tbsp peanut butter
Instructions
In a bowl, combine soy sauce, vinegar, ginger, garlic, and sesame oil. Toss pork strips in this mixture. Heat vegetable oil in a skillet or wok and add peanuts, stirring until toasted. Add pork with the marinade and onion, stir-frying over high heat until meat is cooked through, about 5 minutes. Add bell peppers and continue stir-frying until peppers are bright, about 3 minutes. Push meat and peppers to the side, add peanut butter to the juices, and stir until sauce is slightly thickened. Stir everything to combine and serve over rice.
Notes
You may substitute pea pods for bell peppers.
