Cuban Potatoes

Ingrédients

15 Small Red Potatoes

4 Bacon Slices Chopped

1 Cup Chopped Green Bell Pepper

3 Garlic Cloves, Minced

3 TBSP Olive Oil

1.5 TSP Cumin

0.5 TSP Salt

0.5 TSP Black Pepper

0.75 Cup Chopped Green Onion

0.5 Cup Shredded Sharp Cheddar Cheese

0.5 Cup Shredded Monterey Jack Cheese

Instructions

1. Boil potatoes in lightly salted water until tender, 15 minutes, drain and cool slightly

2. Cook bacon on medium-high for approx 3 minutes, remove from pan, leave oil

3. Add bell pepper to skillet, cook 4 minutes, add garlic, cook 1 more minute, remove from heat.

4. Place cooled potatoes on lightly greased pan using your hand or the flat side of a meat mallet, crush the tomatoes just enough to break them open.

5. Drizzle potatoes with olive oil, sprinkle with salt pepper and cumin.

6. Top with bacon, cooked bell pepper, garlic, green onion, and cheeses.

7. Broil 5 minutes or until cheese melts.
