Rainbow Cabbage Salad Recipe

Ingrédients

1/2 cup tahini

1/2 lemon (juiced)

1 clove garlic (minced)

1/2 thumb ginger (minced)

1 tbsp maple syrup

2 tbsp olive oil

2 tbsp warm water

1/2 tsp salt

1/2 head red cabbage (diced)

1/2 cucumber (thinly sliced)

1 carrot (ribboned)

1 1/2 cups cilantro (diced)

1 red bell pepper (thinly sliced)

1/2 cup cashews

Instructions

Combine dressing ingredients in a jar and whisk until smooth. Taste and adjust salt and sweetness as needed.

Combine all salad ingredients in a large bowl with the dressing. This will keep in the fridge for up to 3 days.
