Angel Biscuits

2 packages (¼ oz each) dry yeast
¼ cup warm water (110-115°F)
2 cups warm buttermilk (110-115°F)
5 cups all-purpose flour
1/3 cup sugar
1 tablespoon baking powder
1 teaspoon baking soda
1 teaspoon salt
1 cup shortening or melted butter
Instructions
Dissolve yeast in warm water; set aside. In a large mixing bowl, combine flour, sugar, baking powder, soda, and salt. Cut in shortening with a pastry blender until mixture resembles coarse meal. Stir in yeast and buttermilk mixture. Turn out onto a lightly floured surface; knead lightly 3-4 times. Roll dough to ½-inch thickness, cut with a 2½-inch biscuit cutter. Place on a greased baking sheet and let rise in a warm place about 1½ hours. Bake at 450°F for 8-10 minutes. Lightly brush tops with melted butter.
