Curried Peanut Chicken

3-4 half chicken breasts, skinned and deboned
¼ cup oil
2 tsp. salt
3 tsp. curry powder
1 large onion, cut into strips
1 large green pepper, cut into strips
1 large tomato, sliced
¼ cup peanut butter
¼ cup water
Instructions
Cut chicken into bite-sized pieces. Add chicken and oil to wok and brown the chicken pieces. Turn heat down, add salt and curry, and mix with chicken drippings and cook, stirring for one minute. Add onion, pepper, and tomato. Cover and simmer over low heat for 30 minutes or until tender. Mix water and peanut butter together and add to wok. Cover and allow to cook over low heat another 5 minutes. Serve over rice.
