Roasted Zucchini Sticks

Instructions

Preheat the oven to 400°F. Line a baking sheet with 1 parchment paper.

Cut the zucchini into sticks about 6 inches long and ¾ inch 2 thick. Pour some olive oil onto a plate and spread some bread

crumbs out in a shallow dish or pie plate.

Roll the sticks in the olive oil, then the bread crumbs. Place 3 them on the prepared baking sheet.

Roast for 25 to 30 minutes, flipping once, or until the zucchini is tender and golden. Cool and serve.

Makes 4 servings

MAKE AHEAD: Refrigerate for up to 3 days. Re-crisp the bread crumbs by reheating the sticks in the oven for 5 minutes. Cool and serve.

Notes

Keeping the peel on the zucchini helps the roasted stick stay in one piece. Don't be surprised if your baby sums the softer part of the zucchini and leaves the peel behind. These super-simple veggie sticks are delicious on their own or dunked into marinara sauce.
