Ingrédients

1 package elbow macaroni

Olive oil

1-2 carrots

1 onion

1-2 celery stalks

2+ potatoes

4 cloves garlic

Oregano

Thyme

Salt

Pepper

Red chili flakes

6 cups veggie broth

2-3 tomatoes

1 can white beans

Other veggies

Instructions

Chop veggies and onion

Dice garlic

Take skin off tomatoes and chop

Heat oil and add onion

Add garlic, carrots, celery

Once soft add potatoes and spices, tomatoes, broth

Boil

Bring to low heat and cover for 20 minutes

Separately cook pasta

Add beans and pasta to soup
