    Pasta Carbonara / Bacon Mushroom

    Ingrédients

    400g penne

    200g pancetta or bacon (8-12 long thin rashers)

    1 onion, chopped finely

    2 garlic, minced

    4 egg yolks

    300ml cream

    ½ cup grated fresh parmesan cheese

    2 T parsley

    Instructions

    Cook pancetta or bacon with onion and garlic in oil until crisp. (6 mins)

    Beat yolks, cream and cheese.

    Cook pasta, removing 1 cup water before draining pasta.

    Return pasta to saucepan.

    Mix pancetta mix into pasta and while still hot pour over cream mix.

    Return to low heat for 3 to 6 mins to thicken sauce and warm through.

    Add some of the pasta water to thin sauce if needed.

    Mix in parsley.

    Notes

    **Bacon and mushroom**

    6 bacon rashers thinly sliced

    250 Swiss brown mushrooms thickly sliced

    4 shallots thinly sliced

    ¼ cup chives

    4 egg yolks

    300ml cream

    ½ cup grated fresh parmesan cheese

    Fry bacon and mushroom in 2t oil

    Cook 5 mins

    Add shallots and garlic

    Reduce to low

    Cook pasta drain and add in bacon mix

    Mix cream yolks and parm

    Add to pasta with chives

    Cook 2 mins
