HONEY DIJON PORK CHOPS with Zucchini Fries & Roasted Carrots

Instructions
Adjust rack to middle position (top and middle positions for 4 servings) and preheat oven to 425 degrees. Wash and dry produce. Trim, peel, and cut carrots on a diagonal into ½-inch-thick pieces. Toss carrots on one side of a baking sheet with a drizzle of oil, salt, and pepper. (For 4, spread carrots across entire sheet.) Roast on middle rack for 5 minutes (you'll add more to the sheet then).
Meanwhile, trim and halve zucchini crosswise, then cut lengthwise into sticks (like fries-ours were 3 inches long and ½ inch wide). Halve, peel, and finely chop half the shallot (all for 4 servings).
Once carrots have roasted for 5 minutes, carefully toss zucchini on opposite side of baking sheet with a drizzle of oil, salt, and pepper. (For 4 servings, leave carrots roasting. Toss zucchini on a second sheet and roast on top rack, switching racks halfway through.) Return to oven and roast on middle rack until veggies are browned and tender, 15-18 minutes more.
Meanwhile, pat pork dry with paper towels and season all over with salt and pepper. Heat a drizzle of oil in a large pan over medium-high heat. Add pork and cook until browned and cooked through, 4-5 minutes per side. Turn off heat; transfer to a plate and cover to keep warm. Remove pan from heat to cool for 1 minute.
Return same pan to medium heat (if pan is dry, add a drizzle of oil). Add shallot and cook, stirring, until softened, 3-4 minutes.Remove from heat. Stir in dressing, sour cream, and 2 TBSP water (4 TBSP for 4 servings); whisk until well combined and glossy, 1-2 minutes. Taste and season with salt and pepper if desired.
Cut pork crosswise into slices; divide between plates with veggies alongside. Top pork with as much pan sauce as you like.Serve any remaining sauce on the side for dipping.Slice chicken crosswise. (Skip slicing salmon!)
