2 pork tenderloins
1 yellow onion, sliced
1 poblano pepper, sliced or diced
4 gloves garlic, minced
2 jars salsa verde
paprika
chili powder
cumin
cayenne
oregano
2 limes, juiced
either brown sugar, splash of coke, or splash of OJ
Instructions
Preheat oven to 320 degrees Fahrenheit
Add avocado oil to dutch oven. Sauté onions on medium high heat until cooked down and caramelizing. Add poblanos. Add garlic. Add spices and allow those to bloom. Add sugar component (either brown sugar with water, orange juice, or coke).
Once liquid is cooked out some, move to sides and sear the tenderloins. Flip tenderloins. Add both jars of salsa. Cover with lid and place in oven. Let cook for 2.5-3 hours. Take out and shred pork with fork and mix. Replace lid and put back in oven for at least 15 minutes. Serve.
