Ingrédients

1 cup sugar

4 large egg whites, at room temperature

1/4 teaspoon salt

1/2 teaspoon vanilla extract

Instructions

1. In the top of a double boiler, whisk together sugar, egg whites, and salt. Cook over simmering water, whisking constantly, until sugar is dissolved and egg whites are warm to the touch, about 4 minutes.

2. Transfer mixture to the bowl of a stand mixer fitted with the whisk attachment, and beat at low speed for 2 minutes. Increase mixer speed to high. Add vanilla, and beat until stiff peaks form and mixture cools, about 6 minutes. Use immediately.
