Boursin Twice-baked Potatoes

Ingrédients

1 box of Boursin Shallot & Chive Cheese

4 large baking potatoes

Salt

Crumbled cooked bacon (optional)

Thinly sliced scallions or chives (optional)

Chopped fresh parsley (optional)

Instructions

Heat oven to 400°F

Pierce potatoes with fork in several places

Place potatoes on baking sheet and bake until soft, about 1 hour

Remove potatoes from oven and allow to cool slightly

Cut off the top third of each potato and gently scoop out cooked potato into a medium bowl, leaving about 1/2-inch shell intact

Discard tops of potato and put potato shells back onto baking sheets

Mash cooked potato until crumbly

Stir in Boursin Cheese and a pinch each of salt and pepper

Taste and season accordingly

Spoon potato mixture into potato shells

Bake for 15 minutes or until heated through

Garnish with toppings, if desired
