Sausage and Chorizo Ragu

Ingrédients

  • 8 sausages

  • 100g chorizo

  • 1 onion

  • 2 carrots

  • 2 celery sticks

  • 3 cloves garlic

  • 2 tbsp tomato paste

  • 180ml red wine

  • 1 stock cube/pot

  • 1 tin chopped tomatoes

  • 2 tbsp oregano

  • Salt

  • Pepper

  • 1 tsp Worcestershire sauce

  • 80ml double cream

  • 80g parmesan

  • Pasta

  • Fresh parsley to garnish.

Instructions

  1. Start off by taking the skin off your sausages and cooking them for 10 mins until they’re nice and brown.

  2. Take them out then add a diced onion, 2 diced carrots and 2 diced celery sticks.

  3. Cook until soft then add 3 cloves of chopped garlic.

  4. After a minute add 2 tablespoons of tomato paste and stir.

  5. 2 minutes later, throw in 180ml of red wine and simmer for about 8 minutes until it’s reduced by half.

  6. Toss in some beef stock and stir it in, then add your sausage back in.

  7. Mix and add a tin of chopped tomatoes.

  8. Stir that all together and add about 100ml of water before simmering for 20 minutes.

  9. Add 2 tablespoons of oregano, salt and pepper to taste, as well as a teaspoon of Worcestershire sauce.

  10. Now get your pasta into some heavily salted water to cook.

  11. Meanwhile add about 80ml double cream and stir before grating in about 80g of parmesan. Or as much as you want to be honest.

  12. Simmer it until your pasta is done then add some pasta water, then toss the pasta in with the sauce until it’s covered in that stunning ragu.
