Overnight Salad- Fruit Salad

2 eggs
1 c pineapple juice
1 T cornstarch
3 T sugar
1 jar maraschino cherries
1 c whipping cream
1/2 lb marshmallows
1 c pineapple tidbits
Instructions
Beat eggs. Add pineapple juice.
Mix cornstarch and sugar. Add to eggs/juice and cook until thick. Let cool
Add whipped cream. Pour over cut-up marshmallows and pineapple. Chill in refrigerator
Notes
I love the understated name “overnight salad” for this recipe. It’s debatable if this is a salad or a dessert, but it is delicious with holiday meals, both summer and winter.
This is another classic Lorraine Hart recipe.
