Ingrédients

1/2 lb ground pork

1 pack silken tofu

1 stalk green onion

1.5 tbps mirin

1/2 tbsp soy sauce

2 tbps sake

1 tbsp sugar

2 tsp potato starch

1 tbsp sesame oil

2 tbsp miso paste

1 tbsp chili oil

Instructions

1. In a bowl, combine mirin, sake and soy sauce. Add potato starch (or corn starch) plus 2 Tbsp water and mix.

2. Add sesame oil to a pan over med heat, then add the ground pork and use a spatula or spoon to break up the meat as much as you can.

3. When it’s no longer pink, add scallion (reserving some for garnish) and the ginger and stir. Then add miso and sugar and combine.

4. Now pour in sauce mixture and stir, adding additional water if needed to help sugar and miso dissolve fully.

5. Continue stirring over medium-low heat until mixture begins to reduce slightly, then drizzle in some chili crisp to your desired spice level.

6. Pour mixture over a block of room temperature silken tofu and garnish with the remaining scallion.
