Quiche Lorraine

2 pastry shells
10 slices of bacon
1 1/2 cups shredded Swiss cheese (6 oz.)
1/2 cup finely chopped onion
1 (2 1/2 oz.) jar sliced mushrooms, drained
4 large eggs, slightly beaten
2 1/2 cups half-and-half
1/2 tsp salt
1/8 tsp pepper
Dash ground nutmeg
Instructions
1. Preheat oven to 375°F. Cook bacon until crisp. Drain and crumble bacon.
2. In a bowl, mix eggs, half-and-half, salt, pepper, and nutmeg. Beat with a whisk until mixed well but not frothy.
3. Add cheese, bacon, onion, and mushrooms. Mix well.
4. Pour mixture into pastry shells.
5. Bake 50 to 55 minutes or until a knife inserted off-center comes out clean.
6. Let stand 10 minutes before serving. Serves 8.
