Instructions
Slice onions
Finely chop garlic and ginger
Slice bell peppers
Slit chilis
Stove to medium
Sauté aromatics
Add curry paste
Sauté on low-medium till some oil separates
Add chicken
Toss on medium
Add bell peppers and coriander leaves stems
Salt to taste
Sauté on medium
Stir in coconut milk and simmer
Add in fish sauce, sugar, chilis, and coriander leaves
