300g Cut Potatoes (Brand: Coles Carisma Potatoes - these potatoes in particular have 25% less carbs than regular potatoes but any potatoes will work)
Salt, Pepper, Garlic Powder, Smoked Paprika, Cumin, Chilli Powder (optional & customisable)
180g Extra Lean Beef Mince (Brand: Woolworths)
100g Red Enchilada Sauce (Brand: Old El Passo - can be substituted for canned diced/chopped tomatoes)
1 Tbsp Tomato Paste
2 Slices Cheddar Cheese (Brand - Dairyworks Natural Cheddar)
25ml Milk
30g Garlic Yoghurt (30g low fat Greek yoghurt mixed with garlic powder or minced garlic)
Chilli & Spring Onion
Instructions
Boil In Water For 3 Min With 1 Tsp Vinegar (Boiling the potatoes vinegar allows them to soak up all of that briny flavor before you dry them off. The result is a soft-in-the-center, crispy-on-the-outside potato that's loaded with flavor.
Air fry at 200 degrees Celsius for 18 - 20 minutes
OR
Bake in the oven at 220 degrees Celsius for 20 - 25 minutes. (Spray with light cooking oil such as Frylight beforehand)
Brands and certain ingredients can be substituted to suit your liking if needed.
IMPORTANT NOTES 👇🏼
When making the cheese sauce start by adding 25ml of milk, microwave for 30 seconds & take it out every 10 seconds to mix it with a fork/spoon. Times may vary depending on the microwave so it may take less or more time. Add more milk if needed & make sure to just keep taking it out & mixing until you have a thick consistency.
Boiling the cut up potatoes with vinegar is optional but does help hold the potatoes together & makes them have an extra layer on the outside to give them a slight crisp.
