One Pot Pizza Mac N Cheese

1lb chicken (diced)

1tbs smoked paprika

1 ½ tbs oregano

Salt and pepper

2oz pepperoni - Approximately 20 slices

2tbs tomato puree

10.5oz pasta

13.5oz hot chicken stock

20oz milk, warmed

5oz cheese- I used a mix of cheddar, and mozzarella, grated

Season to taste

Parsley, oregano and chilli flakes to garnish (optional)

Start by frying half the pepperonis until they’re starting to go crispy and the oils have come out. Add in the chicken and seasoning and cook until it’s browned, Add in the uncooked pasta and give it a good mix, then add in the stock. Cook this until it’s absorbed then turn the heat right down and add the milk, cook that until the pasta is al dented and you’re left with a creamy sauce if the pasta has absorbed too much liquid just add a little more water. Add half of the cheese and mix until the cheese has melted, then season to taste. Sprinkle over the remaining cheese and the rest of the pepperoni and pop under the grill until golden and bubbling. Garnish, Serve and enjoy.
