Ground Beef Pasta

1 pound ground Beef
12 ounces pasta (penne or rotini)
1 tablespoon olive oil
1 onion, chopped
3 cloves garlic, minced
1 bell pepper, chopped
1 zucchini, chopped
1 can (14.5 ounces) diced tomatoes
4 cups chicken broth
1 teaspoon Italian seasoning
Salt and pepper to taste
1/2 cup grated Parmesan cheese
Fresh basil for garnish

In a large pot, heat olive oil over medium heat. Add the chopped onion and minced garlic, sautéing for 2-3 minutes until the onion is translucent.
Add the ground beef to the pot, breaking it apart with a spoon. Cook until browned, about 5-7 minutes. Season with salt, pepper, and Italian seasoning.
Stir in the chopped bell pepper and zucchini, cooking for an additional 3-4 minutes until the vegetables begin to soften.
Add the diced tomatoes (with their juices), chicken broth, and pasta to the pot. Stir well to combine all ingredients.
Bring the mixture to a boil, then reduce the heat to a simmer. Cover and cook for 12-15 minutes, or until the pasta is al dente and has absorbed most of the liquid, stirring occasionally.
Once cooked, remove from heat and stir in the grated Parmesan cheese until melted and creamy. Adjust seasoning if necessary.
Serve hot, garnished with fresh basil.
