Beef Stroganoff & Mashed Potatos

1 lb ground beef
½ medium white or yellow onion, finely diced
1 tsp salt
½ tsp pepper
8 oz sliced fresh white mushrooms
1 tbsp minced fresh garlic
1 ½ cups Kettle & Fire Classic Beef Bone Broth
5 tbsp potato or arrowroot starch
1 tbsp coconut aminos
1 cup canned unsweetened full-fat coconut cream
Optional for garnish: chopped fresh parsley
Upute
HEAT a large skillet over medium heat. Add the ground beef, diced onion, minced garlic, salt and pepper. Cook for 5 minutes, breaking the meat up as it cooks.
ADD the garlic and mushrooms and cook for another 5 minutes. Cook until beef is browned and onions and mushrooms are tender.
IN a large measuring cup or medium mixing bowl, whisk the broth, starch, coconut aminos, and coconut cream until smooth.
ADD broth mixture to the pan of cooked beef, stirring regularly until sauce thickens, about 4-5 minutes. Sauce will thicken more as it cools. Remove from heat and top with optional parsley, if using.
SERVE over mashed potatoes, mashed cauliflower, or cauliflower rice.
FREEZE leftover beef stroganoff in a sealed container for up to 1 month.
