    Bulgogi Beef Smashburger Tacos

    1/2 cup Mayo

    1 tbsp Gochujang

    1 tsp Toasted Sesame Oil

    1/4 tsp Sugar

    2 tbsp Gochujang

    2 tbsp Honey

    1 tbsp Toasted Sesame Oil

    1 tbsp Toasted Sesame Seeds

    1 tbsp Water

    1 tsp Seasoned Rice Vinegar

    1 lb Ground Beef

    7 Flour Tortillas

    1 recipe Bulgogi glaze (above)

    2 cups Kimchi

    1 recipe Gochujang Mayo (above)

    ½ cup Scallions

    Upute

    For the Gochujang Mayo

    Mix all ingredients in a small bowl and set aside

    For the Bulgogi Glaze

    Mix all ingredients in a small bowl and set aside,

    For the Smashburgers

    Divide the meat into 7 balls. Roll into a ball and season with salt and pepper.

    Get a griddle or cast iron super hot over high heat. Once it starts smoking, add the 3-4 beef balls at a time and top with a flour tortilla. Use a press to smash down and flatten the ball.

    Grill until a golden char develops on the meat and then flip. Turn off the heat and cook on the other side for a minute or two or until the tortilla is slightly crispy and golden - watch it to make sure it doesn’t burn.

    Once flipped, add a spoonful of the bulgogi glaze on top of the meat to let it soak in.

    Repeat this process for all the balls of beef.

    Once they’re all grilled, top with kimchi, gochujang mayo and a sprinkle of scallions.

    Serve immediately and enjoy.
