Bratwurst and sauerkraut

For sauerkraut:

1 (24-ounce) jar or refrigerated package sauerkraut

3 tablespoons butter, or 3 bacon slices, diced

1 medium yellow onion, diced

3 or 4 bay leaves

5 or 6 juniper berries

4 or 5 whole cloves

½ cup sweet white wine or water

Salt

Freshly ground black pepper

For bratwurst:

6 bratwurst

1 (12-ounce) bottle lager or weizen beer (optional)

1 tablespoon vegetable oil (if pan-frying)

Mustard, for serving

TO MAKE THE SAUERKRAUT

1. Drain the sauerkraut in a colander or fine-mesh sieve. Rinse it under running water and let it drain again. Press some of the excess moisture out.

2. Melt the butter in a large saucepan over medium heat. If you’re using bacon instead, cook the bacon for 4 to 5 minutes over medium heat until brown. Add the onion and cook for 3 to 4 minutes until softened and translucent.

3. Add the drained sauerkraut, bay leaves, juniper berries, cloves, wine, and enough water to just cover the top of the sauerkraut, stir until combined, and bring to a simmer. Cook the sauerkraut, stirring occasionally, for at least 30 minutes and up to 1 hour. You may need to add more water or wine if it evaporates too quickly. Taste and add salt and pepper, if needed.

TO MAKE THE BRATWURST

4. Precooking the bratwurst before frying or grilling them is optional, but to do so, pour the beer and the same amount of water into a large saucepan (if not using beer, pour in 3 cups of water). Add the sausages and bring just to a boil over medium-high heat. Immediately turn the heat to medium-low and simmer for 10 minutes. Then fry or grill until the skin is brown and crispy.

5. If you are frying the bratwurst, heat the oil in a sauté pan or skillet over medium heat, add the sausage, and fry for about 8 minutes until well browned all over. If you are grilling the bratwurst, place them on a hot grill and cook, turning often, until cooked through, about 8 minutes.

6. Remove the bay leaves, juniper berries, and whole cloves from the sauerkraut. Serve the bratwurst with the sauerkraut and mustard on the side.

VARIATION TIP: For a sweet sauerkraut, peel, core, and chop an apple and add it to the pan with the onion. The apple will cook down and blend with the cabbage.

24.11.2024. Незрозуміло, якого розміру мають бути трушні братвурсти. Я купив щось схоже на сосиски, 12 штук — ну то три на порцію виглядало норм. Очікував щось схоже на тушену капусту, тому води багато не давав, а першу порцію набрав без юшки на тарілку. Вийшло без смаку. Зрозумів, що юшку треба набирати з капустою, і стало супер.
