    Baked Salmon With Peach Salsa

    FOR THE SALSA

    1 peach, chopped

    1 scallion, white and green parts, chopped

    ½ red bell pepper, chopped ½ cup chopped cucumber

    Juice of ½ lime

    Pinch red pepper flakes

    FOR THE FISH

    4 (5-ounce) skinless salmon filets

    ¼ teaspoon sea salt

    ¾ teaspoon freshly ground black pepper

    1 tablespoon extra-virgin olive oil

    FOR THE SALSA

    In a small bowl, stir together the peach, scallion, red bell pepper, cucumber, lime juice, and red pepper flakes. Set aside.

    FOR THE FISH

    1. Preheat the oven to 400°F. Line a small baking sheet with aluminum foil and set aside.

    2. Rub the sea salt and black pepper onto both sides of the fish and place them on the prepared sheet.

    3. Drizzle the fish with olive oil.

    4. Bake for about 15 minutes, until the salmon flakes easily.

    5. Serve with the salsa.
