    Gochujang Pulled Pork Sliders

    2 lbs pork tenderloin

    hawaiian rolls or brioche buns

    1 yellow onion, sliced

    3 tablespoons garlic, minced

    3 tablespoons brown sugar

    3 tablespoons gochujang

    1/4 cup soy sauce

    1 tablespoon ginger, minced

    1/2 cup apple cider vinegar

    2 cups chicken broth

    Salt and pepper

    For slaw:

    1 half head of green or red cabbage

    4 green onions

    1/4 cup kewpie mayonnaise

    1 lime

    2 tablespoons rice wine vinegar

    For quick pickles:

    4 mini cucumbers

    1/4 cup rice wine vinegar

    1/4 cups soy sauce

    2 tablespoons sesame oil

    2 teaspoons sesame seeds

    2 teaspoons red chili flakes

    Petunjuk

    1) Preheat oven to 350 degrees. Heat avocado oil in a dutch oven or other oven safe pot on med-high heat. Pat dry tenderloins and salt. Sear tenderloins on both sides. Set aside after done searing, they will finish cooking later

    2) Add onion to pot then add brown sugar. Add gochujang paste, stir well. Add ginger and garlic and cook for 30 sec. Pour in vinegar to deglaze the pot. Add soy sauce. Add back tenderloins then pour in chicken broth, enough to cover the tenderloins. Cover pot and put in oven for 2-3 hours.

    3) 30 min before serving, use 2 forks to shred pork. Assemble sandwiches and serve.
