    Bruschetta Chicken Pasta

    Ingredienti

    8 ounces penne pasta

    2 boneless, skinless chicken breasts

    2 tablespoons olive oil

    1 teaspoon Italian seasoning

    Salt and pepper to taste

    2 cups cherry tomatoes, halved

    1/4 cup fresh basil, chopped

    2 cloves garlic, minced

    1 tablespoon balsamic vinegar

    1/2 cup mozzarella cheese, shredded

    Parmesan cheese for serving

    Istruzioni

    Cook the penne pasta according to package instructions until al dente. Drain and set aside.

    While the pasta is cooking, season the chicken breasts with olive oil, Italian seasoning, salt, and pepper.

    Heat a skillet over medium heat and cook the chicken for 6-7 minutes on each side, or until fully cooked and golden brown. Remove from the skillet and let rest for a few minutes before slicing.

    In the same skillet, add the cherry tomatoes and garlic. Sauté for 2-3 minutes until the tomatoes start to soften.

    Add the cooked pasta to the skillet with the tomatoes, then stir in the sliced chicken, fresh basil, and balsamic vinegar. Toss everything together until well combined.

    Sprinkle the shredded mozzarella cheese over the top and cover the skillet for a minute to allow the cheese to melt.

    Serve hot, garnished with additional fresh basil and grated Parmesan cheese.
