Blackberry Beet Salad

Ingredienti

Microgreens - mix of broccoli, kale, and mustard

Roasted Gold and Chioggia Beets

Blackberries

Seared Anjou Pear

Sliced Shallot

Burrata or farmers cheese

Crushed Pistachios

Istruzioni

Preheat oven to 375°

Cut top and bottom off beets, and scrub. No need to peel

Wrap each individually in foil and place on baking sheet

Bake for 1 hour, allow to cool for 15-20 minutes, then unwrap

Slice pears into 1/2" thick pieces and sear for a few minutes in hot oil on the stovetop

Slice shallot into thin rings

Cut beets, and blackberries into bite size pieces

Crush pistachios with the side of a knife or in a bag with a tendorizing hammer

Start salad with a layer or microgreens, add toppings, then dollap the burrata or farmers cheese, sprinkle the pistachios, and finish with the dressing
