    Ingredienti

    1 lb pork stew meat (cubed)

    2 medium carrots, chopped

    1 parsnip or turnip, chopped

    1 cup potatoes (peeled & cubed)

    2 tbsp olive oil

    1 tsp dried thyme

    1 tsp dried rosemary

    4 cups chicken broth (or water + bouillon)

    Salt and pepper to taste

    Istruzioni

    In a large pot, heat garlic-infused oil over medium-high heat. Sear pork until browned on all sides (about 5–7 minutes).

    Add chopped root vegetables and herbs. Stir to coat.

    Pour in broth, bring to a boil, then reduce to low and cover.

    Simmer for 1 to 1.5 hours, until pork is fork-tender and vegetables are soft.

    Season with salt and pepper to taste. Serve warm!

    INSTANT POT:

    Sauté the pork:

    Set Instant Pot to Sauté (Normal). Add garlic-infused olive oil and brown the pork cubes (about 5–6 minutes). Work in batches if needed. Press Cancel once browned.

    Deglaze:

    Add a splash of broth to scrape up browned bits from the bottom (important to avoid the “burn” warning).

    Add veggies & seasoning:

    Stir in carrots, parsnip/turnip, potatoes, thyme, and rosemary. Pour in remaining broth. Stir to combine.

    Pressure cook:

    Lock lid and set valve to Sealing

    Cook on Manual / Pressure Cook — 15 minutes on High Pressure

    Natural release:

    Let pressure release naturally for 10 minutes, then quick-release any remaining pressure.

    Season & serve:

    Open lid carefully. Stir, taste, and season with salt and pepper as needed.
