Bacon and Vegetable Frittata

8 size 7 eggs
6 rashers bacon
1 red capsicum
2 medium carrots
1 medium parsnip
1 cup broccoli
2 tsp crushed garlic
1/4 cup of cream/water
1 tbsp olive oil
1 tbsp mixed herbs
2 tbsp ground linseed
2 tbsp pumpkin seeds
Istruzioni
Thinly slice vegetables, and bacon and break up broccoli head
Add olive oil to pan, add, and sauté vegetables, bacon, herbs and garlic in medium sized pan
Heat oven to 180c
Line focaccia/slice 15x25cm dish with baking paper and spray with dots (20-25 minute cook)
Small loaf dishes with baking paper and spray dots (30-35 minute cook)
Beat the eggs adding cream, or water
Pour sautéed mixture into lined dish
Pour beaten egg over the mixture adding pumpkin seeds and linseed
Remove from over, remove Frittata from dish carefully and cool on airing rack
Serve hot, or once cool cut into portions for freezing
