    Cottage Cheese Eggs

    Ingredienti

    1/2 cup cottage cheese

    2 large eggs

    1/4 cup chopped onion

    1/4 cup chopped bell pepper (any color)

    1/4 cup chopped spinach

    1/4 tsp garlic powder

    1/4 tsp onion powder

    Salt and pepper to taste

    Optional: 1/4 cup shredded cheese (cheddar, Monterey Jack, etc.)

    Istruzioni

    Preheat the oven to 375°F (190°C).

    Whisk all ingredients together in a bowl. Add cheese if you like.

    Split the mixture into two oven-safe ramekins.

    Bake for 15-20 minutes, or until eggs are set and the tops are lightly golden.

    Let cool a few minutes, then serve warm!

    Pro tips:

    Add extra veggies like mushrooms or zucchini for extra flavor!

    Spice things up with a pinch of red pepper flakes.

    Serve with salsa, avocado, or your favorite hot sauce for an extra kick
