600g pork butt (cut into 1-inch think pieces)
4 tbsp char siu sauce
2 tbsp chee hau sauce
1 tbsp rose petal wine

See pic 3, slightly cut the edge of the pork butt pieces every 1 inch so it won’t curl up while roasting
Marinate for 3 hours minimum in fridge
Convention roast (if your oven has this function) or just bake is fine. 360F, top rack.
10-15 min depends on the size of the pork, so start with 10 and then add 2 mins check again,, another 2 mins if it still looks raw.
Flip to the other side of the pork, another 10-15 mins
I roast it in a half sheet pan with a baking rack in it so the sauce will drain while roasting.
Brush the pork with maltose or honey then broil for 2-3 mins (you wanna see the edge slightly crisp or burnt), same for the other side
I like maltose/honey 50-50 mixture for this part!!
