Burger Buns

3 EL (tablespoons) milk (3.8%), at room temperature

40 g cane sugar

340 g flour (type 550) plus some for dusting the work surface

½ cube (21 g) fresh yeast

1 large egg

35 g softened butter

3 tsp flour (type 405)

9 g sea salt

240 ml water

Before Baking

For brushing:

1 egg white

1 tbsp water

1 pinch of sea salt

Optional topping according to the recipe or preference (eg sesame seeds)

Mix egg white, water, and sea salt in a bowl and refrigerate until needed.

Prepare the desired topping and have it ready.

Dough Preparation

1. Warm the milk to 45°C in a pot, pour it into a bowl, add 1 tbsp sugar and 1 tbsp flour (type 550) as starter ingredients. Crumble in the fresh yeast and stir until smooth. Let the mixture rest for 10 minutes until bubbles form.

2. In the meantime, beat the egg with the remaining sugar in another bowl.

3. In a large bowl, mix the softened butter with both types of flour and the sea salt until a crumbly mass forms, resembling a streusel dough.

4. Gradually fold in the yeast-milk mixture and then the egg mixture. Knead the dough for about 6 minutes by hand or using a stand mixer until smooth and non-sticky. The dough should no longer stick to the sides of the bowl. If it's too sticky, add a bit of flour. Avoid over-kneading, which can make the dough too dense.

Shaping the Dough

1. Form the dough into a large ball and place it in a greased bowl. Cover with plastic wrap or a damp cloth and let it rise for 1-2 hours until it has doubled in volume.

2. After resting, divide the dough into 8 equal pieces and shape them into smooth balls. Roll the pieces under your palm on the work surface with circular motions to create even, smooth balls. Place the dough balls on a baking sheet lined with parchment paper, ensuring a gap of at least 5 cm between them. Cover loosely and let them rise again for about 1 hour until they double in size.

Tip: For perfectly round buns, place the dough balls in round metal rings (e.g., dessert rings with a diameter of 8-10 cm) to control their shape during baking.

Baking the Buns

1. Once the buns have risen, brush them with the egg white-water-salt mixture using a silicone brush. Ensure the entire surface is coated.

2. Optionally, add your desired toppings.

3. Bake the buns for 15–20 minutes at 200°C in a preheated oven until golden brown. (The buns should not be brushed again during baking).

4. Remove from the oven, let them cool slightly, and brush with melted salted butter if desired.

Caution: Loss of salt on the buns might not be noticeable at first but will show as an imprint on the parchment paper.
