Kielbasa Pasta

12-16 oz pasta - farfalle, fusilli, or penne

1 lb kielbasa

1 onion, diced

1 bell pepper, diced

1 tbsp extra virgin olive oil

2-3 cloves minced garlic

1 tsp oregano

1/4 c grated Parmesan

Salt and pepper to taste

Optional:

4-8 oz chopped mushrooms

1/2-1 green or yellow zucchini, diced

Minced basil to taste

1. Boil water and cook pasta according to package directions. Drain and set aside, reserving some pasta water.

2) Heat oil over medium-high heat. Cook kielbasa until browned on both sides. Remove to a bowl.

3) Turn pan to medium. Add onions and cook 3-5 min until soft. Add peppers and cook an additional 3 min. Add optional additional vegetables and cook through. Add garlic, oregano, and salt and pepper.

4) Stir kielbasa back into vegetable mixture. Taste and adjust seasonings. Add additional pasta water or oil if needed. Add noodles and toss to combine.

5) Top pasta with cheese and optional basil. Serve.

Recipe is very forgiving and open to many different vegetables - great for using up odds and ends.
