Lentil Tacos/Burritos

2 cups lentils

2 packs taco seasoning

6 cups water

For serving:

Costco flour tortillas

Cheese

Lettuce

Sour cream

Tomatoes

Salsa

Avocado

Cook 2 cups of lentils according to package directions, except add 2 packs of taco seasoning. Rinse and cook with 6 cups of water. Bring to a boil, reduce heat, and simmer for 1 hour.

For serving:

Warm Costco flour tortillas on a griddle. Top with lentils, cheese, lettuce, sour cream, tomatoes, salsa, avocado, etc. Fold up like a burrito and enjoy!

노트

I use bulk lentils, which are really cheap. You can cook the lentils longer for a refried beans texture.
