    French Toast Muffins

    Ingredients:

    11/2 cups all-purpose flour

    1/2 cup granulated sugar

    1 tablespoon baking powder

    1/2 teaspoon salt

    1 teaspoon ground cinnamon

    1/2 teaspoon ground nutmeg

    1 cup milk

    2 large eggs

    1/4 cup melted butter

    1 teaspoon vanilla extract

    1/2 cup cinnamon sugar (for coating)

    Preheat your oven to 375°F (190°C) and line a muffin tin with paper liners.

    In a large bowl, whisk together the flour, granulated sugar, baking powder, salt, cinnamon, and nutmeg.

    In a separate bowl, mix the milk, eggs, melted butter, and vanilla extract until well combined.

    Pour the wet ingredients into the dry ingredients and stir until just combined. Do not overmix.

    Divide the batter evenly among the muffin cups.

    Bake for 15-18 minutes or until a toothpick inserted into the center comes out clean.

    While the muffins are baking, place the cinnamon sugar in a small bowl.

    Once the muffins are done, let them cool slightly.

    Brush the tops of the muffins with melted butter and then roll them in the cinnamon sugar.
