Hungarian Potato Stew

• Olive oil
• Salt
• 2 kg/2.2 lbs potatoes, chopped into small chunks
• 2 large onions, diced
• 1 bell pepper, diced
• 4-6 cloves of garlic, crushed
• 2 small chili pepper, finely chopped
• 1 can of chopped tomatoes
• (2 ribs of celery, chopped)
• approx. 1.6L vegetable broth - enough to cover potatoes
• 1 tbsp (sweet) paprika
• 1 tbsp berbere spice
• 2 tsp smoked paprika
• salt
• pepper
Fremgangsmåte
• Add oil, salt, onion, pepper, garlic, chili to a large pot, then sauté over medium heat for about 10 minutes, stirring frequently (add celery after 5 minutes
• Add potatoes, tomatoes, berbere, sweet+smoked paprika, and enough vegetable broth to cover. Bring to a boil
• Then, reduce heat and cook over medium heat until potatoes are fully cooked and almost creamy - 30-45 minutes. (Add more water/broth if needed)
• Season with salt and pepper and serve with bread
• Optional additions: yoghurt, sour cream, egg
