Stuffed Mushrooms

3 tbsp Finely chopped green onion
2 Garlic cloves, minced (or 1/2 tsp., 2 mL, powder)
2 tsp Olive (or canola) oil
12 oz Raw medium shrimp, peeled, deveined and finely chopped
1 tbsp Chopped fresh dill (or 3/4 tsp., 4 mL, dill weed)
1/4 tsp Pepper
2 tbsp Fresh whole wheat bread crumbs
2 tbsp Finely grated fresh Parmesan cheese
20 Brown (cremini), or white, mushrooms, about
2 inches (5 cm) in diameter, stems removed
Fremgangsmåte
Sauté green onion and garlic in olive oil in frying pan for about 5 minutes until soft.
Add shrimp, dill and pepper. Heat and stir for about 2 minutes until shrimp is pink.
Remove from heat.
Add bread crumbs and Parmesan cheese. Mix well.
Stuff mushroom caps with shrimp mixture. Arrange on ungreased baking sheet. Bake in 475°F (240°C) oven for 5 to 8 minutes until mushrooms are just cooked and shrimp mixture is golden brown. Makes 20 stuffed mushrooms.
