    Apple Pie Overnight Oats

    Ingredienser

    1 tbsp coconut oil or butter (I use vegan)

    2 apples (peeling is optional, and diced)

    1-2 tsp maple syrup

    1/2 tsp cinnamon

    1 pinch salt

    1 cup rolled oats

    1 tbsp chia seeds or ground flaxseed

    1/2 cup Greek yoghurt (I use vegan)

    1 ½ cups soya milk (or milk of choice)

    1 tsp cinnamon

    1 tsp vanilla extract

    1/-1 tbsp maple syrup (optional)

    1 pinch salt

    Almond butter

    Cashew Butter

    Syrup

    Cinnamon

    To make the apples, heat a saucepan over a low heat and add the coconut oil or butter. Add the diced apples along with the cinnamon, pinch salt and syrup. Cover with a lid and cook for 10 minutes, stirring occasionally. Remove the lid and cook for a further minute, while stirring.

    Add the overnight oat ingredients to a large bowl and mix well. Cover and leave to soak overnight or for 2-3 hours in the fridge until a porridge like consistency has formed.

    When the oats are ready, serve with the stewed apples and toppings of choice. Alternatively, you can layer the oats and apples up in jars ready for grab and go breakfasts!
