Bread:
372 g sourdough starter
256 g (1 c) whole milk
252 g (2 c) all purpose flour
17 g (4 t) sugar
1.5 t malt, non-diastatic
1.5 t instant yeast
3/8 t baking soda
3/4 t salt
Sesame seeds to sprinkle on top
Sauce:
1/4 c plain 2% Greek yogurt
1/4 c light mayo
2 t white balsamic vinegar
2-4 cloves garlic, peeled and chopped fine
1/2 T chopped parsley
1/8 t salt
Sandwich:
Yellow mustard
Freshly shredded Parmesan, extra-sharp cheddar and mozzarella cheese
Thinly sliced ham
Thinly sliced salami (use both cotto and genoa)
Thinly sliced onion
Thinly sliced tomato
Chopped Romain lettuce
Chopped olives

Bread:
Preheat oven to 375°.
Scald milk, then pour into mixer bowl. Mix on low, cooling until below 120°, or until not too hot to hold a finger in it. Continue on “low” and add the sourdough.
Mix together the flour, sugar, malt powder, yeast, baking soda, and salt. Add half at a time to the starter mixture, mixing on low until combined.
Increase speed to 50% and knead for 7 min. This is a very wet dough; when pulled by hand, the bowl full should stretch over a foot without tearing, and look reminiscent of taffy being pulled. Cover and proof for 20 min.
Grease (2) 9” round pans generously with cooking spray. Divide dough into the pans; it will spread while proofing. Spray plastic wrap with cooking spray, then lay over the pans. Proof until doubled, about 45 min to an hour.
Uncover, then sprinkle with sesame seeds. Place pans directly on oven rack and bake for about 17-20 min. Cool in pans on a rack for about 10 min, then remove pans and cool directly on a rack.
Sauce:
Mix ingredients and set aside
Sandwich:
To make the sandwiches: slice the bread horizontally in half and lightly toast it, then spread the inside of the top half with mustard. Spread both halves with the garlic dressing. Sprinkle the bottom bun with cheddar and parmesan and the top half with mozzarella. Set in the oven at 350 to melt the cheese. When the cheese is melted, sprinkle the bottom half with olives, then pile on the meats, onion, lettuce, and tomato. Enjoy!
Notater
Tricky bread recipe. Plan to double the proofing time or bread will be very flat.
Very sticky dough. Line all pans with parchment paper!
