    • 2 ½ lbs bone-in chicken thighs with skin

    • I Tbsp olive oil

    • I tsp salt

    • ½ tsp pepper

    • ½ cup soy sauce

    • ¼ cup apple cider vinegar

    • I Tbsp honey

    • 3 cloves garlic, minced

    • I tsp fresh minced ginger

    • I cup whole cashews

    • 4 green onions, sliced

    • cooked brown rice (optional)

    Fremgangsmåte

    1. Sprinkle chicken with salt and pepper.

    2. In a large skillet, heat olive oil over medium-high heat; add chicken and brown about 2 minutes per side.

    3. Remove chicken from skillet and place in slow cooker.

    4. Mix together soy sauce, apple cider vinegar, honey, garlic and ginger in a small bowl; pour over chicken.

    5. Cover and cook on low 3-4 hours.

    6. Add in cashews; cover and cook an additional i5 minutes on low.

    7. Top with sliced green onions and serve over rice.
