    Cilantro-Lime Potato Salad Recipe

    2 pounds small white (or red) potatoes, quartered

    1 tbsp. + 1 tsp. olive oil

    Salt and pepper

    1⁄3 cup mayonnaise

    2 tbsp. finely chopped shallots

    2 cloves garlic, minced

    3 tbsp. finely chopped, fresh cilantro, plus more for garnish

    2 tbsp. fresh lime juice

    1 cup diced celery

    Thinly sliced radishes (optional)

    Step 1

    Preheat oven to 400°F.

    Step 2

    In large bowl, toss potatoes with olive oil, and season with salt and pepper. Spread over rimmed baking sheet. Roast, stirring occasionally, until potatoes are tender and golden brown, 25–30 minutes. Remove from oven and cool slightly before transferring back to large bowl.

    Step 3

    Meanwhile, in medium bowl, whisk together mayonnaise, shallots, garlic, 3 tablespoons cilantro and lime juice.

    Step 4

    Add dressing and celery to potatoes; mix gently to coat. Season, to taste, with salt and pepper. Refrigerate 2–4 hours to allow flavors to marry.

    Step 5

    Serve, garnished with radishes, if desired, and additional cilantro. Refrigerate any leftovers.
