Gut Health Veggie Lasagne

This is the ultimate veggie lasagne that packs in over 10 of your weekly plant points, it’s got all the classic flavours with a bit of a kick and a lot of goodness ❤️
I really think as a nutritionist that diet culture pushed us in the direction of ultra-processed, low fat, low carb food and our guts will have all taken a big hit from this. Going in to 2025 I’m putting a big focus on carrying on to look after and support my gut the best I can with lots of veg and lots of tips to help you do the same❤️🌿
Ingredients (makes 3-4 big portions)⬇️
1 red pepper diced
1 yellow pepper diced
2 carrots diced
1 large onion diced
1 tin of lentils
1 vegetable stock cube
2 teaspoon mixed herbs
1 teaspoon garlic granules
1 teaspoon peri peri seasoning
1 tin of chopped tomatoes
2 tablespoons tomato puree
1 handful spinach
1 handful kale
200ml water
6 lasagne sheets
White sauce (recipe on previous slow cooker lasagnes)
Handful of mozzarella

Dice your veg and cook your peppers, onion and carrots
Once softened, add your lentils, chopped tomatoes and seasoning and mix well before adding your water, vegetable stock, seasonings, lots of salt and pepper followed by your tomato puree and stirring again
Fremgangsmåte
Add your spinach and kale and stir and simmer on a low heat until wilted while you prepare the white sauce
Preheat your oven to 170 degrees
Add your lasagne sheets, followed by some of the ragu mix, then followed by another row of lasagne sheets and another layer of the ragu mix
Add your final lasagne sheets and cover with the white sauce, some fresh spinach and some mozzarella and bake for 35-40 minutes
