Fabulous Beef Fajitas

1 1/2 tsp Tex Mex seasoning
2 tsp Dried oregano
1/2 tsp Ground cumin
1/4 tsp Garlic powder
1/8 tsp Salt
1 1/2 lbs Beef strip loin steak
1 tbsp Cooking oil
1 cup Sliced red onion
1 cup Thinly sliced red pepper
1 cup Thinly sliced yellow pepper
1 cup Thinly sliced green pepper
4 tbsp Lime juice
2 tbsp Chopped cilantro (or fresh parsley)
12 Flour tortillas (7 1/2 inch, 19 cm, diameter), warmed
Fremgangsmåte
Combine first 5 ingredients in small bowl. Reserve 1 tbsp. (15 mL) seasoning mixture. Rub both sides of steak with remaining seasoning mixture. Broil on top rack of oven for 3 to 4 minutes per side until internal temperature reaches 145°F (63°C) for medium rare or until steak reaches desired doneness. Remove to large plate. Cover to keep warm. Heat cooking oil in large frying pan on medium-high. Add reserved seasoning mixture and onion. Cook and stir for about 4 minutes until onion is starting to brown. Add peppers. Cook and stir for about 4 minutes until tender-crisp. Remove from heat. Add lime juice and cilantro. Stir. Set aside. Thinly slice steak. Arrange down centre of tortillas. Spoon vegetables over beef. Fold bottom ends of tortillas over filling. Fold in sides, slightly overlapping, leaving top ends open. Makes 12 fajitas. 1 fajita: 300 Calories; 10 g Total Fat (4.5 g Mono, 1 g Poly, 3 g Sat); 35 mg Cholesterol; 30 g Carbohydrate; 2 g Fibre; 21 g Protein; 350 mg Sodium
