Bourbon Brown Sugar Barbecue Sauce

1 28-oz can crushed tomatoes
1 cup firmly packed brown sugar
2 tablespoons molasses
½ cup bourbon
½ cup ketchup
¼ cup Heinz chili sauce
¼ cup apple cider vinegar
⅛ cup red wine vinegar
¼ cup worcestershire sauce
2 teaspoons classic pork dry rub
½ teaspoon salt
¼ teaspoon freshly ground black pepper
1 tablespoon unsweetened cocoa powder
Instructies
In a large saucepan over low heat, combine tomatoes, sugar, molasses, bourbon, ketchup, chili sauce, vinegars, and worcestershire sauce, stirring well after each ingredient is added. Bring to a simmer.
Add the pork dry rub and simmer the sauce over low heat until all of the flavors have blended together and the sauce has thickened slightly, about 30 minutes.
Let the sauce cool in the saucepan for about 10 minutes, and then puree the sauce until smooth with either an immersion blender or a traditional blender. Season with salt and pepper. Add the cocoa powder and mix well. Let stand for 5 minutes, then give final stir to make sure the cocoa powder is well distributed.
Let the sauce cool; store in the refrigerator for up to 2 weeks.
