Meatloaf With Brown Sugar-Ketchup Glaze

Brown Sugar-Ketchup Glaze:
½ cup ketchup
4 tablespoons brown sugar
4 teaspoons apple cider vinegar
Meatloaf:
6 ounces thin-sliced bacon (8-9 slice), chopped
1 medium onion, chopped
1 small green bell pepper, chopped
2 garlic cloves, minced
2 large eggs
1 teaspoon dried thyme leaves
1 teaspoon salt
2 teaspoon ground black pepper
2 teaspoons Dijon mustard
2 teaspoons Worcestershire sauce
4 teaspoon hot red pepper sauce
2 pounds ground beef
1 small zucchini, shredded and squeeze out the juice. Discard juice
⅓ cup minced fresh parsley leaves
Instructies
Glaze: mix all ingredients and set aside
Meatloaf:
Preheat oven to 350°
In a medium pan over medium heat cook the bacon until browned. Move bacon to paper towel lined plate. Set aside.
Drain the bacon grease leaving two tablespoons in the pan. Add onion and bell pepper and saute until soft and lightly brown. Add the bacon, onion, bell pepper and remaining ingredients to a large bowl and use hands to work everything together and form into a loaf
Place the loaf on a wire rack on an aluminum foil lined cookie sheet. Baste with half the glaze and bake and preheated oven for 30 minutes. Add the rest of the glaze to the meatloaf and bacon additional 30 minutes or until internal temperature reaches 165°
