    Easy Miso Pot Noodle Recipe

    ITS FREEZING 🄶 in london!

    This is one of my go to lunchboxes to take to work! It’s so comforting, warm and I get to decide what goes into my pot noodle!

    You literally just throw in miso paste and a splash of Soy sauce with whatever vegetables you have lying around, top with rice noodles & it’s packed and ready for work! Prep it the night before or in the morning and when you’re ready to eat just pour in boiling water, cover for 3 minutes & enjoy šŸ˜‹

    P.S. really should have added a tsp of chilli oil to this too šŸ˜ next time!

    Recipe:

    1 tsp miso paste

    Splash of soy sauce

    Few cubes of tofu or other protein

    1 spring onion - sliced

    1 mushroom - sliced

    Few baby spinach leaves - chopped

    1/4 red chilli - optional

    Few coriander leaves

    30gms instant Rice noodles

    1ļøāƒ£ Put your miso paste & soy sauce into a glass mason jar first, then top with all the veg

    Instructies

    Add the rice noodles on top & seal the jar & pop it into your work bag

    When ready to use, fill the pot with just boiled water so it fully covers the noodles, cover for 3 minutes

    Enjoy šŸ˜‹
